A breakfast scrambler is like a deconstructed omelet with all the good stuff! This recipe feeds about 6. I invited my friend over to try the scrambler, and she said it was the best "omelet" she's ever had. Hopefully you feel the same. Here's how to make it
Ingredients:
16 eggs scrambled
1 package of cooked pork sausage links
2 cans of button mushrooms
1 red bell pepper, chopped
1 medium onion, diced
3 medium russet potatoes
1 cup shredded Mexican blend cheese
2 tbsp of vegetable oil
2 tbsp olive oil
salt and pepper to taste
Instructions:
Peel and dice russet potatoes. Toss in olive oil, season to taste, and cook in air fryer on 400 degrees for 18 minutes, shaking halfway through.
Pour 2 tbsp of vegetable oil into skillet or wok on medium high heat
DIce and chop red bell pepper and onion.. add to skillet and cook until bell pepper and onion are slightly crunchy
Cut pork sausage links into 4 or 5 pieces per link
Add button mushrooms, air fried potatoes, and cut up pork sausage links to skillet. Cook for 5 minutes or until bell pepper and onion are soft and food is hot.
Whisk 16 eggs until scrambled. Add to skillet. Stir mixture until eggs are fully cooked.
Turn off stove and add 1 cup of shredded Mexican cheese. Stir until melted and serve.
