I've been making this turkey vegetable soup almost weekly. I make it into 6 portions and its only 390 calories per serving! Its easy, filling, and so good! Here's how to make it:
Ingredients:
2 lbs 99% fat free ground turkey
24oz frozen mixed vegetables
3-4 russet potatoes
3 cans of no salt added diced tomatoes
1 medium onion
4 cups low sodium beef broth
2 tsp Italian seasoning
1 tsp cayenne pepper (optional)
Instructions
Peel and dice potatoes. Put on a microwavable plate and microwave for 8 minutes
Dice onion and cook in skillet with ground turkey until completely cooked. Drain if needed
In a large soup pot, add diced potatoes, onion, ground turkey, diced tomatoes, frozen mixed vegetables, and beef broth.
Add Italian seasoning, optional cayenne pepper, and mix all ingredients
Bring to a boil, then simmer on low for 45 minutes. Serve when completed
