The BEST Turkey Vegetable Soup


I've been making this turkey vegetable soup almost weekly. I make it into 6 portions and its only 390 calories per serving! Its easy, filling, and so good! Here's how to make it:

Ingredients:

  • 2 lbs 99% fat free ground turkey

  • 24oz frozen mixed vegetables

  • 3-4 russet potatoes

  • 3 cans of no salt added diced tomatoes

  • 1 medium onion

  • 4 cups low sodium beef broth

  • 2 tsp Italian seasoning

  • 1 tsp cayenne pepper (optional)

Instructions

  1. Peel and dice potatoes. Put on a microwavable plate and microwave for 8 minutes

  2. Dice onion and cook in skillet with ground turkey until completely cooked. Drain if needed

  3. In a large soup pot, add diced potatoes, onion, ground turkey, diced tomatoes, frozen mixed vegetables, and beef broth.

  4. Add Italian seasoning, optional cayenne pepper, and mix all ingredients

  5. Bring to a boil, then simmer on low for 45 minutes. Serve when completed
